Whatever works for you gets the job done.
Looks like you got around 0.032 Jump to your lands. But the OAL is not your chamber depth.
The SAAMI Spec is not related to the barrel lands, but to provide a spec that will work for any rifle of that caliber.
(Most manuals specify what will fit in most magazines and .223s are usually specified for AR Mags which are extremely short.)
The 2.250 spec was probably more valid for bullets up to 55 grs.
Your 75 gr Match has much more length from ogive to tip than the lighter bullets. That length is sitting in the barrel not touching anything.
The bullet base to ogive length is what is getting close to the lands.
If you were shooting 90 gr bullets, the bullet base to tip is about twice the overall length of a 55 grain bullet and almost half of its length is bullet ogive to tip that doesn't ever touch the rifling.
